Look After Your Cast Iron Skillet
Michalis 'BIG Mike' Kotzakolios

The cast iron skillet has far more versatility than just being used as a weapon. Don’t laugh, the image of the Three Stooges bonking each other over the head (“And one for you!”) is pretty much most people’s visual impression of what a skillet is used for.

The other more accurate is that of the cowboys on the old westerns cooking in an iron skillet over a campfire. The reason that this image is more accurate is that an iron skillet is an all purpose skillet that can cook all sorts of items. Meat, vegetables and specialty items like Italian peppers and sausage can all be ‘drummed up’ in a cast iron skillet.

But, unlike the skillets in the aforementioned Three Stooges films, the cast iron skillet is not indestructible. If one is going to make the wise investment, one should take a few precautionary measures to ensure that the skillet isn’t wrecked by neglect when cooking.

On a baseline level, always be mindful of the temperature that the cast iron skillet is cooking over. It the range is turned up too high and, if it is a gas range, starts to look like a football team’s bonfire, the bottom of the cast iron skillet can end up quite charred. This is often deceptive with such as skillet, as they actually take a while to heat up.

Also, when turning meat, eggs, or whatever over in the skillet, use a spatula. Do not make the mistake some people make and try to flip things with a fork. If the fork misses or goes through the food, there will end up being nasty little scratches on the skillet. Sharp instruments are a sure way to trash the skillet. Keep you skillet safe, use blunt objects!

An iron skillet is a good edition to a kitchen and a wise investment. If your kitchen is missing one, go out and get one right now!
